A santoku is a compact, flat all-rounder with a rounded tip that is easy to control on a smaller board. Aogami #2 (Blue #2) is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust. The Japanese wa handle is light and puts the balance toward the blade.
