About this knife
- Santoku knives of this 170mm length are a mid size that suits smaller boards and kitchens.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- Ginsan (Silver #3) is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Good to know for beginners
Ginsan sharpens much like carbon steel while resisting rust. The pear-skin (nashiji) finish hides scratches. A great 'carbon feel, stainless care' knife.
