A santoku is a compact all-rounder with a flatter edge, made for push-cutting vegetables, meat and fish. Aogami #2 (Blue #2) is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust. The Western handle has the familiar heft and grip of a European chef's knife.
