About this knife
- Petty knives of this 120mm length are small, for detail work and compact boards.
- It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
- VG-10 is a stainless steel, which resists rust better than carbon steel.

Good to know for beginners
A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. At 120mm it is nimble enough for work in your hand. VG-10 is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
