About this knife
- Petty knives of this 120mm length are small, for detail work and compact boards.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- Aogami Super is a carbon steel that rusts and stains if it is left wet, so it is wiped dry after every use.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Good to know for beginners
A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. At 120mm it is nimble enough for work in your hand. Aogami Super is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust (the stainless cladding keeps the rest of the blade easy). The Japanese wa handle is light and puts the balance toward the blade.
