About this knife

Good to know for beginners
A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. Aogami #2 (Blue #2) is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust (the stainless cladding keeps the rest of the blade easy). The Japanese wa handle is light and puts the balance toward the blade.
