What to know before you buy

About this knife

  • Honesuki knives of this 150mm length are small, for detail work and compact boards.
  • It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
  • SLD is semi-stainless: it resists rust better than carbon steel but is not stain-proof.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Written from this knife's catalog record (steel, handle, length, grind). Knife Fit has not tested it; see how we work.

Good to know for beginners

A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. SLD is semi-stainless: long edge life, just wash and dry it after cooking. The Japanese wa handle is light and puts the balance toward the blade.
