Good to know for beginners
A nakiri is a flat, rectangular vegetable knife that chops straight down with full board contact. Shirogami #1 (White #1) is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust (the stainless cladding keeps the rest of the blade easy). The Japanese wa handle is light and puts the balance toward the blade.
