About this knife
- Petty knives of this 150mm length are small, for detail work and compact boards.
- It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
- Shirogami #1 (White #1) is a carbon steel that rusts and stains if it is left wet, so it is wiped dry after every use.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. 150mm is the most versatile petty length. Shirogami #1 (White #1) is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust. The Western yo handle gives a familiar, full grip.
