About this knife
- Kiritsuke knives of this 210mm length are the usual size for a main kitchen knife.
- It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
- R2/SG2 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Good to know for beginners
A gyuto is the Japanese chef's knife: one blade for nearly every job, with a gentle curve for rocking and a fine tip for detail work. R2/SG2 is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
