About this knife
- Petty knives of this 135mm length are small, for detail work and compact boards.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- Aogami Super is a carbon steel that rusts and stains if it is left wet, so it is wiped dry after every use.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Good to know for beginners
A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. 135mm is the most versatile petty length. Aogami Super is carbon steel: very sharp and easy to sharpen, but wipe it dry while you cook or it will rust. The Japanese wa handle is light and puts the balance toward the blade.
