A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. At 120mm it is nimble enough for work in your hand. R2/SG2 is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
