What to know before you buy

About this knife

  • Honesuki knives of this 150mm length are small, for detail work and compact boards.
  • It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
  • Ginsan (Silver #3) is a stainless steel, which resists rust better than carbon steel.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners

A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. Ginsan (Silver #3) is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
