What to know before you buy

About this knife

  • Yanagiba knives of this 200mm length are the usual size for a main kitchen knife.
  • It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
  • AUS-8 is a stainless steel, which resists rust better than carbon steel.

Limits to know

  • It is single-bevel: sharpened on one side only, made for one hand, and harder to sharpen well than a double-bevel knife.

Written from this knife's catalog record (steel, handle, length, grind). Knife Fit has not tested it; see how we work.

Good to know for beginners

A yanagiba is the traditional sashimi knife. It is single-bevel (sharpened on one side only), which lets it cut raw fish in one long pull with glassy-clean faces. Plan on whetstone sharpening (including the flat back, the ura), and note it is made for right-handers. 200mm is a manageable length for home sashimi. AUS-8 is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
