What to know before you buy
About this knife
- Sujihiki knives of this 270mm length are long: best on a large board with room to work.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- R2/SG2 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.
Limits to know
- A thin grind cuts easily but is not made for hard or frozen food, bones or twisting in the cut.

Good to know for beginners
A sujihiki is a long, narrow slicer. It carves roasts, brisket, turkey and boneless fish in one smooth pull instead of sawing back and forth. 270mm gives extra reach for big roasts and whole fillets, but needs a large board. R2/SG2 is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
