What to know before you buy

About this knife

  • Honesuki knives of this 145mm length are small, for detail work and compact boards.
  • It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
  • Molybdenum stainless is a stainless steel, which resists rust better than carbon steel.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Written from this knife's catalog record (steel, handle, length, grind). Knife Fit has not tested it; see how we work.

Good to know for beginners

A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. Molybdenum stainless is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
