What to know before you buy
About this knife
- Kiritsuke knives of this 240mm length are long: best on a large board with room to work.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- VG-10 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

A kiritsuke is a chef's knife with an angled k-tip and a flatter edge, made for push-cutting and slicing. VG-10 is stainless: it won't rust in normal use, so it is the easy choice for everyday cooking. The Japanese wa handle is light and puts the balance toward the blade.
