About this knife
- Kiritsuke knives of this 210mm length are the usual size for a main kitchen knife.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- VG-10 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.
