A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. INOX (Molybdenum stainless) is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
