What to know before you buy

About this knife

  • Honesuki knives of this 150mm length are small, for detail work and compact boards.
  • It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
  • Molybdenum stainless is a stainless steel, which resists rust better than carbon steel.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners

A honesuki is a stiff, triangular Japanese boning knife for breaking down chicken and trimming meat around joints. Work between the bones with the tip and heel; never chop through them. Most honesuki are ground for right-handers. Stainless steel is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
