What to know before you buy
About this knife
- Sujihiki knives of this 240mm length are long: best on a large board with room to work.
- It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
- VG-1 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.
Limits to know
- Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners
A sujihiki is a long, narrow slicer. It carves roasts, brisket, turkey and boneless fish in one smooth pull instead of sawing back and forth. 240mm is the easiest slicer length on a home cutting board. VG-1 is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
