What to know before you buy

About this knife

  • Sujihiki knives of this 239mm length are the usual size for a main kitchen knife.
  • It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
  • Ginsan (Silver #3) is a stainless steel, which resists rust better than carbon steel.
  • It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners

A sujihiki is a long, narrow slicer for carving roasts and portioning meat and fish in one stroke. Ginsan (Silver #3) is stainless: it won't rust in normal use, so it is the easy choice for everyday cooking. The Japanese wa handle is light and puts the balance toward the blade.
