A yanagiba is the traditional sashimi knife. It is single-bevel (sharpened on one side only), which lets it cut raw fish in one long pull with glassy-clean faces. Plan on whetstone sharpening (including the flat back, the ura), and note it is made for right-handers. 300mm is a professional length that needs a long board. Ginsan (Silver #3) is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
