About this knife
- Sujihiki knives of this 240mm length are long: best on a large board with room to work.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- R2/SG2 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

- A thin grind cuts easily but is not made for hard or frozen food, bones or twisting in the cut.

Good to know for beginners
A sujihiki is a long, narrow slicer. It carves roasts, brisket, turkey and boneless fish in one smooth pull instead of sawing back and forth. 240mm is the easiest slicer length on a home cutting board. R2/SG2 is stainless, so it shrugs off a wet board. The Japanese wa handle is light and puts the balance toward the blade.
