What to know before you buy

About this knife

  • Petty knives of this 210mm length are the usual size for a main kitchen knife.
  • It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
  • VG-10 is a stainless steel, which resists rust better than carbon steel.
  • It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.

Limits to know

  • Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners

A petty is the small knife for the jobs a chef's knife is too big for: peeling, trimming, shallots, herbs and fruit in hand. At 210mm it also doubles as a light slicer for sandwiches and small roasts. VG-10 is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
