What to know before you buy
About this knife
- Sujihiki knives of this 270mm length are long: best on a large board with room to work.
- It has a Western-style (yo) handle, the kind most cooks outside Japan are used to.
- VG-10 is a stainless steel, which resists rust better than carbon steel.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.
Limits to know
- Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.

Good to know for beginners
A sujihiki is a long, narrow slicer. It carves roasts, brisket, turkey and boneless fish in one smooth pull instead of sawing back and forth. 270mm gives extra reach for big roasts and whole fillets, but needs a large board. VG-10 is stainless, so it shrugs off a wet board. The Western yo handle gives a familiar, full grip.
