About this knife
- Nakiri knives of this 165mm length are a mid size that suits smaller boards and kitchens.
- It has a Japanese-style (wa) handle: a handle without a metal bolster, set into the blade with a hidden tang.
- SKD (SKD12 / A2) is semi-stainless: it resists rust better than carbon steel but is not stain-proof.
- It is double-bevel (sharpened on both sides), so it works for left- and right-handed cooks.
Limits to know
- Like any hard Japanese blade, keep it off bones, frozen food and glass or stone boards.
